2. Does someone have to plate it

Cake, tarts and anything sliced needs a person with a knife, plates, and about twenty minutes. That is labor on your invoice. Single serve formats do not.

3. Can every guest eat it

The usual approach is one main dessert plus a separate plate for the dietary restrictions. It is easier and cheaper to pick something everyone can eat and skip the second order entirely.
